No Oil Hummus

Hummus with no oil!? How can it be!? I have no problem with oil, it’s great …for some things. However, I personally try to avoid using large amounts of it. I have found it is not necessary to make creamy Hummus, you can taste the chickpeas and spices much more without it. Try it out, and if ya hate it- send me an email and I can help tweak it with you!

Ingredients:
• 1 can of chickpeas
• 5 cloves of garlic
• Juice of 1 lemon
• 1/2 cup of chickpea liquid salt to taste, optional- but I use this instead of oil
• 1 tablespoon tahini (optional)
• salt to taste (optional)
Directions:
• Soak the chickpeas in warm water for at least 30 min.

• Drain them and try to take as much of their seal off. This is not necessary, but I find the hummus to be 100x more smooth when I take time for this step.
• Put all the ingredients into a food processor or blender and mix it up!

• Start with less chickpea water, then continue to add for your desired consistency. I am always adding more garlic or seasoning so taste to make it perfect for you
